Cod with samphire

INGREDIENTS (Serves 2)

2×6 oz cod loins
2 oz samphire
Olive oil
2 oz cold butter cut into cubes
3 garlic cloves, minced
1 small onion, finely sliced
6 black peppercorns
6 cherry tomatoes
250 ml dry white wine
1 pinch of paprika
1 tbsp chopped fresh dill

METHOD

Place 2 tbsp of olive oil in a large bowl
Add the paprika, the black peppercorns, ½ tbsp of dill, 125ml wine, 1 tsp garlic, ½ onion
Add the cod and mix well. Marinade for at least 30 minutes and up to two hours
Turn oven on to 250°C
Place the rest of the onion and garlic on an oiled oven tray
Drain the cod and place on top of onion and garlic
Sprinkle a tiny pinch of salt over the cod. 
Place the cherry tomatoes around the fish
Bake for 10 minutes
In the meantime, make the sauce
Bring the marinade and the rest of the wine to a boil
Add the samphire and boil for 1 minute
Remove the samphire
Whisk the butter one cube at a time to emulsify it
Once turned into a lightly thick sauce, return the samphire to the pan and add the dill
Spoon the sauce over the cod 
Serve immediately with steamed greens and Charlotte potatoes.
