Chicken Fabada
Fabada Asturiana is an iconic Spanish dish from Asturias.
It usually consists of white beans and chorizo, morcilla (black pudding) and pork belly.
In this instance, I’ve simply used chicken legs to make it.
INGREDIENTS (Serves 2)
4 chicken legs cut in half
1 Spanish onion, finely chopped
2 cloves of garlic, minced
2 large potatoes, cut in to 1” pieces
1 green pepper, diced
1 tin of haricot beans
½ tin of chopped tomatoes
1 Tbsp tomato puree
1 pinch ground fennel
1 pinch thyme
1 chicken stock cube
Olive oil
Fresh thyme to decorate
METHOD
In a large pan, heat 2 Tbsp oil.
Sauté the chicken on medium heat until golden brown
Add the onion and cook for 3 minutes
Add the pepper and cook for a further 3 minutes
Add the garlic and herbs. Sauté for 1 minute
Add the chopped tomatoes and puree
Add 2 pint of water and stock cube
Cook for 15 minutes
Add the potatoes and beans
Simmer until the potatoes are cooked
Decorate with fresh thyme
Serve with crusty bread
