Salmon Teriyaki
INGREDIENTS(Serves 2)
2 salmon fillets
100 ml soy sauce
1 oz brown sugar
½ tsp minced ginger
2 cloves garlic, minced
1 tsp rice wine vinegar
100 ml pineapple juice
1 Tbsp cornflour
2 Tbsp water
Olive oil
1 sliced spring onions
1 tsp sesame seeds
METHOD
Preheat oven to 200°c.
Line an oven tray with foil. Spread a tbsp of olive oil
In a small pan, mix soy sauce, brown sugar, ginger, garlic and pineapple and bring to a simmer over medium-low heat until the mixture turns into a syrup.
Remove from heat and allow to cool slightly.
Place the salmon on an oven tray.
Spoon syrup over the top of each fillet. Reserve 2 Tbsp
Bake the salmon for 6-8 minutes.
Remove from oven and add spread leftover syrup on each fillet.
Turn grill on and return salmon to the oven for an additional 2-3 minutes.
Garnish with sliced green onions and sesame seeds.
