Cajun Haddock with spicy tomato sauce

INGREDIENTS: (Serves 2)

2 skinless fillets of haddock
1 onion, sliced
2 cloves of garlic, minced
Olive oil
1 tin of chopped tomatoes
Cajun spices
Chilli flakes
Thyme
1 bay leaf
Salt and pepper
Fresh parsley, chopped
Sugar
½ glass of dry white wine

METHOD:

Place the fillets of haddock on a plate
Rub with 1 Tbsp of olive
Sprinkle 2 tsp of Cajun spices onto the fish
Rub well to cover all the fish
This may be done up to 24 hours in advance

Sauce:

Heat 2 Tbsp of olive oil in a saucepan
Add the sliced onion and fry on medium heat
Cook until soft and slightly golden
Add the garlic
Fry for 1 minute
Add the chopped tomatoes
Add 1 tsp of Cajun spices, chilli flakes and 1 Tbsp of parsley
Add ½ pinch of thyme and the bay leaf
Add 1 tsp of sugar
Add the wine
Cover and cook for 20 minutes

The fish:

Heat 5 Tbsp of oil in a frying pan
Place the fish carefully in the pan
Fry on high heat for 2 minutes
Carefully turn over
Fry for a further 2 minutes
Lift onto a warm plate
Spoon some sauce over the fish
Sprinkle some chopped parsley
Serve with new potatoes and any green you like.
