North African markets
Around North Africa, one will often come across shops that specialise in one single line of products. You will find a grocer who sells nothing but spices, another who will stock only olives and olive oils. Others will showcase dates from every single Saharan oasis or nuts and seeds from as far as Indian and Iran.
Below is my favourite chilli sauce, Harissa. It is a mix of chillies, sweet peppers, caraway seeds and garlic. The original one comes from Tunisian but, nowadays it is produced all over the world. This sauce serves to add a nice kick to all sorts of dishes and enhance the flavour of the blandest ones.
